¼ cup tomato paste
1 tablespoon honey
¼ cup mirin (from Oriental market)
½ cup sugar
1 ounce grated garlic
1 tablespoon rice vinegar
1 tablespoon sesame oil
¼ teaspoon yuzu juice
pinch of black pepper

MARINADE FOR ASIAN EGGPLANT AND SHIITAKE MUSHROOMS

INGREDIENTS:

¼ teaspoon yuzu juice
1 tablespoon honey

INSTRUCTIONS:

Makes 5 servings

1 ¼ pounds green tea buckwheat noodles (from Oriental market)

1 Asian eggplant
1 cup shiitake mushrooms

2 English cucumbers
5 ounces lotus root
1 carrot

1 egg, pan-fried
