BERKSHIRE BONE-IN PORK LOIN ROAST

INGREDIENTS:

8 ounces pork loin, one bone per person
6-8 garlic cloves

3 tablespoons olive oil
1 tablespoon low sodium soy sauce
2 tablespoon lemon juice
6 shallots, peeled and halved
3 firm green pears, quartered
3 tablespoons olive oil

3 tablespoons butter
fresh chopped rosemary to taste
1-2 tablespoons flour
1 cup of good white wine, preferably chardonnay

2 tablespoons soy sauce
salt and pepper to taste

INSTRUCTIONS:

Cut slits into pork and push in garlic slices Place olive oil, soy sauce and lemon juice in plastic bag with pork loin and marinate at least 30 minutes.

Drain and place pork in pan with shallots and pears. Add olive oil and salt and pepper.

Preheat oven to 425 degrees and roast the pork loin for 15 minutes. Reduce heat to 325° and continue cooking until meat thermometer reads 160 degrees, about 40-50 minutes.

Brown the butter and rosemary. Over medium heat add flour and thick to desired consistency. Add wine and stir constantly until reduced to about ½ cup. 

Remove pork, pears, and shallots from roasting pan, cover, and let rest HOW LONG? Pour butter mixture over pork. Add soy sauce, and salt and pepper to taste.

COOK & PREP TIME: about 70 minutes
